Simple Salmon and Rice

Salmon is one of my favorite types of fish to eat,
 and it couldn't be simpler.
 
 
Wild-caught Alaskan Salmon is the most sustainable choice,
if you can find it. =)
 
 
 
SIMPLE SALMON
8oz salmon
salt, pepper
lemon pepper seasoning
 
1.) Spray foil with nonstick spray.
2.) Place salmon, skin side down, on foil. Season.
3.) Fold foil over salmon and make a "pouch" with the salmon inside.
4.) Bake at 350* for 20 minutes.
5.) Open foil pouch, broil for additional 8 minutes.
 
Serve with rice and broccoli or small salad.
 
Optional: top with a sauce made from
plain greek yogurt, dill, and a squeeze of lemon juice.
 
 

One Pot Pasta

Do you ever look at the clock and wonder,
"What happened to the day?"
Yep, me too.
 
 Here is the perfect throw together dinner
 that literally could not be any easier.
It is the perfect base,
and you can always add in different ingredients
or top with chicken, etc.






Add all ingredients to pot.

 
Bring to boil.
Turn heat to low and simmer.
 
That is it.
 
Told you it was easy.

ONE POT PASTA
3/4 lb pasta (spaghetti, bucatini, linguine)
1 pint cherry tomatoes, halved
1/2 onion, sliced thin
2 Tbs minced garlic
1/2 cup heavy cream
4 cups water
1 bunch fresh basil, sliced, (or 2Tbs dried basil)
crushed red pepper
salt, pepper

1.) Add all ingredients to pot.
2.) Bring to boil
3.) Cover and simmer for 10-12 minutes.
Optional : top with shaved parmesan cheese.
